The new location will mark the 10th store for the Alabama-based chain in Kentucky, and it’s set to open early in 2025. Hannah Witherspoon, the enthusiastic franchisee, has big plans that are finally coming to fruition after a few bumps in the road. “You know, I actually started this whole process back in 2019,” Witherspoon shares with a smile. “We really wanted to put our first location right here in Bowling Green, but things got a little tough when the pandemic hit.”
Though her original plans took a detour, Witherspoon didn’t let that stop her. Instead, she quickly shifted gears and opened up Chicken Salad Chick locations in both Owensboro and Evansville, Indiana, where they’ve been doing swimmingly!
Now that the pandemic has eased up, Witherspoon has finally secured what she believes is the ideal spot in the bustling Pines Shopping Center. This location was previously home to the Beet Box Market and has also housed a Moe’s Mexican restaurant in the past. “We’re so thrilled to have found this place at the end of the shopping center,” Witherspoon explains. “It really gives us the space we need to stand out, and we’ll even have a pickup window!” Just to clarify, there won’t be a drive-thru, but Witherspoon assures us that the take-out experience will be a breeze.
If you’ve never been to a Chicken Salad Chick before, let Witherspoon give you the lowdown. “This isn’t just any restaurant; it’s a very Southern, hospitable brand,” she says. The restaurant offers a whopping 15 different styles of chicken salad that patrons can enjoy on bread, alongside crackers, or in a delicious leafy green salad. If you’re looking to take something home, don’t fret! Witherspoon says they also provide chicken salad by the pound and have a selection of soups and side items to check out.
Described by many as “a very unique concept,” Chicken Salad Chick was founded by Stacy Brown in Auburn, Alabama, back in 2008. Since then, it has made a name for itself, skyrocketing to over 260 locations across 19 states! It’s no wonder people are talking—this restaurant is definitely on the rise.
And it seems the excitement is palpable! Social media has become a whirlwind of chatter since the sign went up. “I’ve seen so many people getting excited about the new location,” Witherspoon beams. “They can’t wait for us to open, and that makes me so happy.”
